Baked Carrots
2-1/2 cups cooked, mashed carrots
1 Tbs. minced onion
3 eggs (beaten)
2 cups whole milk
3 Tbs. melted butter
1/2 cup bread crumbs
Salt and pepper, to taste
Combine all ingredients. Pour into a greased casserole dish. Bake, uncovered, at 375 degrees for 1 hour.
