24 Hour Potato Salad
12 cups potatoes (cooked with skins/not without)
12 eggs (hard boiled and mashed)
at least 1/2 cup onions
2 cups celery - chopped
3 cups salad dressing (works better than straight up mayonnaise)
6 T. mustard
2 tsp. salt
2-1/2 cups white sugar
1/4 cup vinegar
When the potatoes cool, mush and mash ‘em like you own ‘em. Mix with the rest of the ingredients.
Will keep 4-5 days. Not that it’ll have to - it’s amazing. Especially with freshly ground pepper and just a little bit of salt.
Now that summer’s in our neck of the woods, it’s time to pull out all the stops in the kitchen. There are just some dishes that you can’t do summer without - and a great potato salad is one of them. Served alongside fried chicken or grilled hamburgers this potato salad is a winner.
