Amish Potato Cakes

2 cups leftover mashed potatoes
1 egg, beaten
1 Tbs. flour (use a little more if needed - if the potatoes are thin)
1 Tbs. cream (use a little less if needed - if the potatoes are thin)
1 Tbs. onion, chopped fine
2 -3 Tbs. shortening

Mix all ingredients together, except for the shortening. Heat shortening in a heavy skillet. Drop potatoes by tablespoons into shortening and brown on both sides.

Yield: 4 - 6 servings

These aren’t just good, they’re dang good. Kids seem to like them with a little ketchup on them. I like butter and….okay, I admit it….I like ketchup on them, too!

They’re best served right from the skillet.
