Banana-Pecan Waffles

BANANA-PECAN WAFFLES

2 eggs
1 1/2 cups milk
3/4 cup sourdough starter
2 teaspoons baking powder
1 ripe banana, mashed
1/2 teaspoon vanilla extract
2 tablespoons sugar
3 tablespoons oil
2 cups all-purpose flour
1/2 cup pecans, chopped

Preheat your waffle iron. In a medium bowl mix the eggs and milk.

Stir in the sourdough starter, baking powder, banana, vanilla, sugar, and oil. Add flour and nuts, stir until well mixed. Pour batter, about 1/2 cup per waffle into the waffle iron and bake until golden brown.

Makes about 6 waffles, each of which is to die for
