Buttermilk Poundcake

1/2 cup butter (NO substitutes)
1/2 cup shortening
3 cups sugar
5 whole eggs
2 tsps vanilla extract
3 cups all purpose flour
1/2 tsp salt
1 cup buttermilk
1/2 tsp baking soda
1 TBS boiling water

Cream butter, shortening, and sugar well in a large bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

Combine flour with salt and add alternatively with the buttermilk - beginning and ending with the flour. Dissolve soda in boiling water and beat into mixture. Pour into a greased and lightly floured tube pan and bake at 300 degrees for about 1-1/2 hours, (test after 1-1/4 hours, in case it’s a fast learner). Let rest for 5 - 10 minutes before removing from pan.

A delicious litte treat is to use this recipe to make little cubes for dipping.. Just bake the cake in two 8 inch pans at 325 degrees for about 40 minutes. Then cut into 1 inch cubes. These cubes are heavenly dipped in a chocolate fondue and are also unforgettable when tossed in a bowl with strawberries and topped off with Cool Whip.

I just made myself ridiculously hungry.
