Candied Sweet Potatoes

by Joi on November 11, 2005

1/2 cup packed brown sugar
1/2 stick margarine
1 (29 oz) can sweet potatoes ( drained, but don’t throw away the liquid)
2 cups marshmallows (regular size)
1/2 cup chopped pecans

Boil the liquid that you didn’t throw away along with the brown sugar and margarine. Cook until thickened - stir constantly.

Add sweet potatoes, cover and bake at 350 degrees for 1 hour.

With 10 minutes to go in the cooking time, add the marshmallows and nuts on top.

Yield: 6 Servings
