Caramel Frosting

1/2 cup stick margarine (a spread will not produce the same frosting)
1 cup packed brown sugar
1/4 cup milk
2 cups powdered sugar

Melt the margarine in a 2 quart saucepan over medium heat. Stir in the brown sugar, heat to boiling, stirring constantly.

Reduce heat to low. Boil and stir for 2 minutes, then add the milk.

Heat to boiling, remove from heat. Cool to lukewarm.

Gradually stir in powdered sugar. Place saucepan of frosting in a large bowl of cold water. Beat until smooth and of spreading consistency.

If frosting becomes too stiff, stir in additional milk – 1 tsp at a time.

Frosts one cake.

This frosting is a hit on just about any type of cake, cupcakes or cookies – but it’s at its best when topping off a Holiday Jam Cake.
