Plush Puffs Gourmet Marshmallows

Oh Joy! Oh Happiness! Oh Unspeakable pleasure! I’m sure you’ve guessed by now that I’m either in the middle of a cup of coffee, a chocolate experience, a delicious cookie, or am currently going one on one with candy of some sort.

I’m actually sort of out-doing myself right now. I just finished my pot of coffee and am losing myself in the best cup of hot chocolate I’ve EVER had. Did you catch that? – - – - EVER!

As always, I made my favorite Hot Chocolate recipe (It’s the one on the back of Kroger’s Baking Cocoa – funny, huh? I’ve tried every hot chocolate recipe known to exist and the best one is on a container of baking cocoa…and a store brand at that! What!?) This recipe always, always, always makes an outstanding cup of hot cocoa. However, I was feeling pretty full of myself this morning, so I kicked it up a notch. Right before I laddled the hot chocolate into our eager holiday mugs (my oldest daughter Emily is always my partner in hot chocolate adventures), I stirred in a little Hershey’s chocolate syrup.

Then, I poured the chocolate, aromatic, liquid Heaven into our cups. I topped hers off with three Chocolate Chipetta Plush Puffs Gourmet Marshmallows – the look on her face was all I needed to tell me that she was in Chocolate Heaven and didn’t want to ever return. I took a sip and I must say – it doesn’t get any chocolate-y-er than this. YUM!

I topped my hot cocoa off with 3 Caramel Swirl Plush Puffs Gourmet Marshmallows. Then, with my intentions clear, I sprinkled on a little Sea Salt. You got it! I was aiming for the effect of Starbuck’s Salted Caramel Hot Chocolate. I honestly, humbly, and with chocolate and marshmallow goo on my face believe I outdid myself. This was a truly remarkable, ridiculously delicious cup of hot chocolate. I’ll just go ahead and say it – it’s even better than the drink Starbucks once made (then heartlessly yanked away!). The delicious caramel flavoring in these marshmallows isn’t just delicious – it’s slap your face delicious.

The same is true of the Chocolate Chipetta Plush Puffs Gourmet Marshmallows. I know my chocolate, and these are premium, first class chocolate marshmallows. They earn the term Gourmet with every single bite.

I’ve thrown the Chocolate Chipetta Plush Puffs Gourmet Marshmallows on top of a dollop of homemade whipped topping in coffee and highly recommend it! Think about it: Coffee, chocolate, candy… all in one place. It makes a remarkable cup of coffee that tastes like it came from a coffeehouse.

I’ve also tried the Luscious Lemony Meringue Plush Puffs Gourmet Marshmallows. If the amazing smell of these gourmet marshmallows doesn’t knock you out, the flavor will. Heavenly! I toss them on top of hot tea – for those of you who (silly gooses!) who don’t care for green tea, these gourmet marshmallows will make the experience one to remember. You’ll drink every last drop.

The different flavors of gourmet marshmallows are outstanding on smores, too. I just build them and put them in the microwave. Everyone loves them. They’re perfect, beautiful, and delicious snacks for eating during ballgames, holiday specials, reruns of Andy Griffith, or your favorite Food Network show.

I’ve also toasted them (on the stove) and used them as dips for chocolate and caramel sauces. Amazing… that’s the best word for the experience… amazing!

There are Peppi-Mint, Cinnamon, and Vanilla Bean varieties that I’ve yet to try. I’m especially eager to meet the Peppi-Mint and Vanilla Bean flavors. Oh the plans I have for them!!!

Chocolate Chip Cookie Dough Bites

Love chocolate candy? Well, of course you do – you’re on one of my websites, aren’t you? I have an automatic filter on my sites that detects non-chocolate lovers and bans them to a black cyber hole, auto-mat-ically. The way I see it, if you don’t love chocolate, I’ve got nothing for you.

So, you obviously love chocolate candy.

I’m pretty sure you also love chocolate chip cookie dough too – who doesn’t?  Now, hold onto something, you’re about to feel a tremor: Someone with a deliciously brilliant mind has blended the two together and the beautiful outcome is pictured above. It’s also right in front of me, but you can’t see that.  Chocolate Chip Cookie Dough Bites are wonderful and you simply must try a box today.  The thing is, you’d better buy more than one, because these tend to disappear fast.

When you first pop one into your mouth, you’re instantly hit by the taste of delicious chocolate. The texture and size will remind you of chocolate-covered raisins or peanuts.  But when you take a bite… chocolate chip cookie dough – but without the eggs so your mom’s “Don’t eat that, it isn’t good for you!” doesn’t apply.

Delicious honey in spoons.... yum!

Below are some fantastic recipes from the National Honey Board that call for two of my all-time favorite flavors in the world:  Honey and Apples. Yum!   One of the reasons I think I love apples so much is they taste like Autumn to me.  Since it’s my favorite time of the year, I’m good with that.  As for honey, I know why I’m so in love with it – it’s a little thing we call a sweet tooth and my head is full of them.  When these two flavors team up, Joi is one happy, happy Kentuckian.

Apple Gem Jelly Recipe
Makes 24 servings

1 cup apple juice
1 1/2 cups honey
1 tablespoon fresh lemon juice
2 red apples, grated with peel on
3 ounces liquid pectin

In a 5-quart saucepan, combine apple juice, honey, lemon juice and grated apples. Bring to a full rolling boil. Boil for 5 minutes, stirring constantly. Remove from heat. Stir in liquid pectin. Skim off foam. Ladle into hot sterilized jars. Seal according to manufacturers instructions. Makes three 1/2-pint jars.

Recipe for Candied Honey Apples
Makes 6 servings

1 cup brown sugar, packed
1/2 cup butter
1/2 cup honey
1/4 cup heavy cream
1/4 teaspoon ground cinnamon
6 small apples
6 wooden sticks
1/3 cup nuts, chopped

Combine all ingredients except apples, sticks and nuts in 2-quart saucepan. Cook over medium-high heat to 265°F; stir constantly. Remove from heat. Cool 5 minutes. Insert stick into top of apple. Holding apple by stick, roll in hot honey mixture to coat; roll bottom of apple in nuts if desired. Place on waxed paper squares to cool. Repeat with remaining apples. Makes 6 apples.

Honey Yogurt Dumplings with Apples Recipe
Makes 8 servings

Dumpling Batter:
1 cup flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
6 tablespoons plain yogurt
1 tablespoon honey
1 tablespoon milk
1 teaspoon orange peel, grated

Apple Mixture:
4 cups apple slices
2 cups cranberry juice
1/2 cup honey
1 cinnamon stick or 1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Combine flour, baking powder, cinnamon and salt in large bowl. Mix together egg, yogurt, 1 tablespoon honey, milk and orange peel in separate large bowl; stir into flour mixture to form moist batter.

Combine apples, juice, remaining 1/2 cup honey, cinnamon stick and nutmeg in heavy large skillet; mix well. Bring to a boil over medium-high heat. Reduce heat to low.

Drop tablespoonfuls of batter over hot apple mixture. Cover and simmer 15 to 20 minutes or until dumplings are cooked through and wooden pick inserted near dumpling center comes out clean.

Harvest Honey Spice Cake Recipe
Makes 12 servings

1 cup honey
1/3 cup vegetable oil
1/3 cup strong brewed coffee
3 eggs
2 1/2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
2 cups tart apples, peeled and chopped
1/2 cup slivered almonds, toasted
1/2 cup dried cranberries
Powdered sugar
Additional toasted sliced almonds, for garnish

Using electric mixer beat together honey, oil and coffee. Beat in eggs. Combine dry ingredients; gradually add to honey-egg mixture, mixing until well blended. Stir in apples, almonds and cranberries. Pour into lightly greased and floured Bundt or tube pan. Bake at 350°F for 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven; cool on wire rack. Dust with powdered sugar; garnish with sliced almonds, if desired.

*****  This is a little off-topic, but if you or anyone you love happens to get whatever it is going around (the coughing, sore throat, chest congestion, sneezing nightmare) – put honey in tea and drinketh a lot! The honey soothes the throat like nothing else can or will and the natural sweetness makes you feel as though you just may live.  If your throat is sore and inflamed, drink your honey-sweetened tea cold – it’ll put out the fire and make the inflamation go down.  If your throat isn’t sore, but you have a lot of chest congestion, drink your honey-tea warm.. it’ll open you up and you’ll re-discover a little something we call breathing.

From my chocolate-coated taste buds:

Mmmmmm! You know me, there are several areas in which my knowledge is legendary and passionate:  Cooking with Buttermilk, animal welfare, coffee, tea, chocolate, old movies, the Food Network, coconut, cookbooks, gladiola flowers, cats, polar bears, UK basketball, St. Louis Cardinals baseball, and raising perfect daughters.   Chocolate has been on my list of expertise since I was about as tall as a dachshund.

Seeds of Change chocolate bars are as passionate about being chocolate as I am about being a chocoholic.  Not only can you can taste their passion in every single bite, you can smell it the second you open one of their candy bars.  When I opened the Dark Chocolate with Coconut bar (it was first since it combines two passions in one!), I let out a happy, happy sigh.  The smell was so exotic and intoxicating – it smelled like chocolate on vacation.  Can you even imagine how Heavenly that is?!?!  Get this – it tasted even better.  I- I love it when chocolate vacations in Hawaii and takes me along.

The Chocolate with Puffed Grains is another favorite.  It tastes a lot like Krackle bars – just a lot fatter and even more chocolaty.   I couldn’t try the Dark Chocolate with Mango and Cashews because of a fierce allergy to mango, but my daughters tell me that it’s beyond sensational.  They put it away like crazy, so I’m guessing it’s fantastic.

The Milk Chocolate bars are SO creamy you just get lost in the experience.  They’re absolutely amazing.  And the Dark Chocolate with Cherries and Vanilla bars are much, much, much better than you’d expect.  They’re what Chocolate covered cherries would be if they turned themselves into candy bars and threw on a little vanilla for good measure.  Delish!

I’m saving the Dark Chocolate for last because dark chocolate has become something of an obsession with me.  Once you get hooked on Dark Chocolate, there’s no going back.  Seeds of Change Dark Chocolate has a glorious 61 percent cocoa and I’ll tell you why that turns me on so:  Eating Dark Chocolate is very good for you.  It contains potent antioxidants that destroy free radicals in your body.  These free radicals are associated with cancer and heart disease.  In the fantastic book, The Denim Diet by Kami Gray, she points out that not all dark chocolate is equal.  The higher the cocoa content, the better for you. Each of the Seeds of Change Dark Chocolate bars (Dark Chocolate with Coconut, dark Chocolate, and Dark Chocolate with Cherries and Vanilla, and Dark Chocolate with Mango and Cashews) have a staggering 61 percent of cocoa.

By the way, remember Mother’s Day is just around the corner, followed closely by Father’s Day – so load up and add some of the best chocolate in the world to their gift bags.  They’ll thank you from the bottom of their hearts (which you’ll help protect if you include the dark chocolate varieties).   Mom and Dad will be so thankful, they may never bring up that dented bumper or broken heirloom vase again.  Or the broken curfews, or the crayon on the walls, or the time you embarrassed them in front of the preacher….

Well, they’ll thank you from the bottom of their hearts….

Seeds of Change Organic Chocolate Candy

There’s a great little article in the February issue of Guideposts titled Sweet Solution.  It’s a beautiful, motivational story about a woman who shares a great, great passion of mine – chocolate!  Click HERE for the story.

Below is one of Susan Mazzone’s delicious recipes.  It’s for chocolate fudge and my mouth is already watering.

SUSAN’S FUDGE RECIPE
3/4 cup marshmallow cream
1-1/2 cups white sugar
2/3 cup evaporated milk (little more if needed)
1/4 cup butter
1/4 tsp salt
1/2 cup milk chocolate chips
2 cups dark chocolate chips
1/2 cup chopped nuts
1 tsp vanilla extract

Line an 8 x 8 inch pan with parchment paper. Set aside.

In a large saucepan over medium heat, combine the first five ingredients. Bring to a boil. Cook for 5 minutes, stirring constantly.

Remove from heat and pour in chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla, and try to keep your fingers out of it! Pour into your prepared pan and chill in the refrigerator for about 2 hours until firm.

I know what I’ll be having for dessert tonight!
