Rachael Ray 2 Piece Lil' HuggersTongs SetI have to confess, every time I see a beautiful, colorful Rachael Ray dish, kitchen gadget or cooking tool, I automatically think two words, “Need that.” So when I saw the Rachael Ray 2-Piece Lil’ Huggers Tong Set Cookware Sets (in blue or orange) shown here, the words automatically popped into my head.

Except this time they were followed by exclamation marks because, this time, it isn’t just a strong want – it is a certifiable need.

My husband was cooking pork chops a few nights ago (and, boy, were they delicious!) and he asked me where my tongs were. Sheepishly, I drug them out of the kitchen tool drawer. They’ve become pretty homely over the years. I made a point, then, to shop for a new pair. My first move was to search for a pair on Amazon, along with the name Rachael Ray. I was certain she had some in her collection.

Success! I found that she didn’t just have one, but had a thongs set (the ones you see here).

I have never bought or received anything from the Rachael Ray collection that wasn’t’ absolute perfection.  Anything she puts her name on is first class and anything she puts her name on will, eventually, wind up in my kitchen.  I take a lot of pride and care in my cooking, so I only want the best of the best in my kitchen. Rachael Ray casserole dishes, pans, cooking tools, towels, cookbooks, and kitchen gadgets are the very essence of best of the best.

For my recent birthday, my husband gave me the Rachael Ray Stoneware 1-Quart and 1-1/2-Quart Oval Bubble & Brown Baker Set, Red shown above. Rachael Ray Cookbook: Top 30 Guy FoodsI have quite a few Rachael Ray Cookbooks in my cookbook collection.  She’s a favorite TV Personality and cookbook author, so if her name’s on it, I’m there.

My oldest daughter Emily (aka the Crazy Tea Chick) and I like a lot of the same haunts:

  • Starbucks
  • Olive Garden
  • Target
  • Kroger
  • Hobby Lobby
  • Bookstores
  • The Library
  • Wherever we happen to be eating lunch out at the moment!

Yesterday, we did it up right.  We hit about 4 of the different places in a matter of hours.  We roll like that - fast and caffeinated.

As I do on every trip to the library, I immediately began looking for my favorite types of books: Cookbooks, books about animals and/or birds, books about heart health and brain health, and biographies.  I also make a point of checking out at least one book that’ll teach me something or introduce me to something or someone I knew nothing about before.

If you love to cook, don’t make the mistake of over-looking your library. Most (like our library here in Owensboro) have amazing collections of cookbooks. You’ll find books about regional cooking, classic cookbooks, specialty cookbooks, and even (yay!) cookbooks by Food Network chefs.  I found an entire row of cookbooks by a personal favorite (Rachael Ray) yesterday. But, much to my 5’3″ chagrin, they were all on the highest shelf possible.  Fortunately, Emily (who isn’t much taller than me) has a killer reach and she retrieved a few down for me.

On this trip, I brought home Guy Food: Rachael Ray’s Top 30 30-Minute Meals. I’d never even seen it before but I have Guy Food / Comfort Food TOP 30 30 Minute Meals – 2 Set (Rachael Ray 30-Minute Meals, Suggested Retail $25.90) and love it. Besides, it’s Rachael Ray – how are you going to go wrong?

When I get cookbooks from the library, if they’re excellent, I then find them on Amazon. If there’s only a certain number of recipes I want, I either make copies or go old school and write them down on index cards. Last night I told my husband that this is one I’ll have to DEFINITELY order on Amazon. Seriously, this is a fantastic collection of hearty, delicious-sounding recipes. I’m planning on making the one below, which also happened to be the first one in the cookbook, asap. Green Onion Mayo? I’m all about that and I’ve never even tried it.

Outside-In Bacon Cheeseburgers with Green Onion Mayo – by Rachael Ray

5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Preheat grill pan over high heat.

In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.

Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.

Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.

Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.

Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

Goji Almond Oat CookiesI loved each variety but if I had to put them in order of my preference, they’d read like this: Goji Almond Oat (I absolutely cannot stay out of these cookies), the Goji Orange MintChip, the Goji Chocolate Chip, the Goji Cherry Cacao, and the Goji Ginger Walnut.

The Goji Almond Oat Cookies are addictive – they should come with a warning label saying as much.  I’m also totally hooked on the Goji Orange MintChip cookies.  The only way to describe them is to say they taste like Christmas would taste if it had a flavor.  The citrus of the orange reminds me of the fruit baskets that are always around the house during the Holidays and the mint makes me think of candy canes.

So, there you have it. They taste like Christmas.

The Goji Cherry Cacao and Goji Chocolate Chip cookies love to be dunked in milk.  They’re super with Rice Milk (a personal favorite).

The Goji Ginger Walnut cookies may come in last in my list but don’t think they aren’t special – ginger just isn’t one of my favorite flavors for some reason.  I LOVE the smell of ginger, but Goji Chocolate Chip Cookiesthe flavor always leaves me scratching my head.  My daughters FLIPPED for this variety though.

Just as well, it frees me up to concentrate on the rest of the gang.  And by concentrate I mean gobble.  If you (like me) have healthier eating in mind for 2011, but have no intention of compromising on flavor and food enjoyment, these are cookies you’ll want to try. They’re wholesome, delicious, nutritious, and perfect for kids of all ages.

They’re ideal to pop into lunch boxes too.

Just How Did I Live Without Moppines?

A while back my husband ordered me a set of red Rachael Ray Moppines. Since I’m unapologetically addicted to all things Food Network and all things Rachael Ray, I had seen the moppines online and on television before but had never gotten around to ordering them.

The upside to never getting around to something is that sometimes a hero (or heroine) on a white horse will order it for you.

Rachael Ray products are always outstanding, whether they’re her cookbooks or magazines or her casserole dishes, kitchen tools, or moppines. If her name and smiling face are on it, you need it.

Rachael Ray Set of 3 Moppines, Red

The Moppine is an all-in-one oven mitt and kitchen towel. Clever, much. The large kitchen towel has pot holders built in two of the corners. Ingenious!

The waffle weave fabric is incredibly absorbent, so I’m able to sponge up water on the counter with it or dry washed dishes then simply hang my moppine up to dry. I find myself tooling around the kitchen with my moppine slung over my shoulder, just as Rachael Ray does on her cooking show.

As someone who is forever burning herself, what I love most of all about the moppine is built in oven mitts. The oven mitt pockets are padded and lined with terry fabric to insulate hands from the heat. Instead of searching around for two pot holders, you simply put one hand into each of the moppines pot holders and remove the casserole dish, cake pan, cookie sheet, or pizza pan.

A few night ago, I found another way that the moppine is a must-have. I was removing a past dish from the oven with my moppine and a little sauce spilled over the side of the dish. Instead of landing on my arm or clothes, the piping hot sauce landed on my moppine.

I’ve never claimed to be very graceful in the kitchen!

I was recently sent a new cookbook to review that I’m very excited about. Excited to tell you about and excited to cook each and every recipe in the 223 page book! You know how, sometimes, as you’re thumbing through a cookbook you’ll go, “I might make that… I’ll try that one… nah… nah… There’s one I might try…. nah…” With this cookbook, I thumbed through the entire book and each recipe was met with a, “I can’t wait to make that one!”

Not a single nah.

However, in this particular interest, I’m certain she carries a much simpler name – one worn closer to the heart. When you get down to it, this cookbook was written by “Isaiah’s Mom.”

The first recipe I made from this outstanding cookbook was the Toasted Ham-and-Tomato Cornbread Sandwiches with Jalapeno Mayonnaise.  I simply used my favorite Buttermilk Cornbread Recipe instead of the “Double Corn Cornbread” called for.  The Double Corn Cornbread recipe is found in the book on page 75 and sounds awesome.  In fact, I plan to give it a try – but I simply had the ingredients on hand for Buttermilk Cornbread, so I went with it.

Besides, I adore buttermilk cornbread and I knew there’d be enough left over for breakfast the next morning.  I love to split cornbread in half, butter it, and toast it lightly on the griddle, right beside eggs as they fry.  Then I top off the cornbread with a layer of Pepper Jelly and place the fried egg right up on top.  SO GOOD.  Then again, the cornbread with pepper jelly is a special experience, with or without the egg.

Toasted Ham-and-Tomato Cornbread Sandwiches with Jalapeno Mayonnaise

1/2 cup mayonnaise
3 jalapenos, seeded and chopped
1/4 cup fresh cilantro or parsley leaves (I used cilantro)
1 tablespoon fresh lime juice
1 teaspoon honey
1/4 teaspoon ground cumin
salt
4 (4-inch) squares Double Corn Cornbread (page 75) or store-bought cornbread – split and toasted
shredded lettuce (about 2 cups) for topping
1 pound deli-sliced smoked ham
4 tomato slices, for topping

1. In a food processor, combine the mayonnaise, jalapenos, cilantro, lime juice, honey, cumin, and 1/4 teaspoon salt. Process until smooth. (This jalapeno mayonnaise is so good you’ll want to eat it straight from the food processor bowl – trust me on this one. Your’s truly spread some on a Ritz cracker and had a fine time.)
2. Spread about 1 tablespoon of the jalapeno mayonnaise on each cornbread bottom; top each with shredded lettuce, ham, and a tomato slice. Spread the remaining jalapeno mayonnaise on each cornbread top and set in place. To serve, cut diagonally.

I actually cooked my cornbread in a large round pan, so my sandwiches were triangular. They were all kinds of cute and even more delicious than I can tell you – however, next time (and there will be many, many next times) I’ll go the square route because it’d be easier to maneuver the tomatoes and lettuce on a wider playing field.

The Toasted Ham-and-Tomato Cornbread Sandwiches with Jalapeno Mayonnaise would be an excellent recipe for tailgating.  You’d surely rack up points for creativity AND taste.

My husband and I saw Rachael Ray make these beans on a recent episode of 30 Minute Meals and I knew I’d have to take them for a test run.  I’m always on the lookout for new bean recipes as well as recipes that utilize the herbs in our herb garden.  This one uses a personal favorite herb, rosemary.

Add the fact that I absolutely, positively love myself some Rachael Ray and I knew it’d be a can’t miss.

My husband didn’t know quite what to make of the rosemary in these beans – but I think it’s the best part.  He liked them but he said he’d like to try them sometime without the rosemary.

If you have the ingredients on hand, these would make an exceptional side dish for your Fourth of July meal – or any meal, for that matter.

Rachael Ray’s Red White Beans Recipe

2 tablespoons extra-virgin olive oil
1 medium to large onion, chopped
2 sprigs rosemary, leaves finely chopped
Salt and freshly ground black pepper
1/4 cup tomato paste
1 cup chicken stock
2 (15-ounce) cans cannellini beans, drained

Heat the extra-virgin olive oil in a skillet over medium heat. Add the onions, rosemary and salt and pepper, to taste. Cook the onions until sweet and soft, 8 to 10 minutes. Stir in the tomato paste for 1 minute. Add the stock, then stir in the beans and reduce heat to low. Adjust seasoning and turn out into a serving bowl. Keep warm until ready to serve.
