A Heart-Healthy Recipe: Red Beans and Tuna Fish Salad

There’s really nothing quite like a beloved family member having to undergo open heart surgery to make you think (long and hard) about heart health, heart healthy foods and drinks, heart healthy activities, and heart healthy recipes.

I’ve been researching the most heart healthy foods lately.  I found a great list of the 25 Top Heart Healthy Foods on WebMd.  Some of the foods listed are:

  • Tuna
  • Brown Rice
  • Blueberries
  • Spinach
  • Salmon
  • Broccoli
  • Tomatoes
  • Cantaloupe
  • Dark Chocolate
  • Tea

I hope you’ll click the link above and see the rest. Even more importantly, I hope you’ll write the list down and add the recommended foods and drinks to your daily diet.  Even if you just add a few to your everyday routine, the benefits will improve your heart’s health.  Don’t wait until you’re sitting in front of a grim-faced doctor before you do something about your heart’s health!

I’m kicking off a new category here on the food blog dedicated entirely to heart health.  I’ll have heart-healthy recipes, foods, heart healthy food reviews, foods to buy and foods to never buy, etc. I’m kicking things off today with a recipe I whipped up for lunch.  I have my uncle (the beloved family member in need of open heart surgery) very much on my mind this week.  I’m also thinking about the rest of my beloved family members – and thinking of ways we can, hopefully, protect ourselves from heart disease.

Naturally, I’m beginning to experiment wildly with heart-healthy foods.  I want to add a lot of recipes to the food blog that are heart-healthy, simple, economical to make, fast and easy, and (as often as possible) made with ingredients you probably already have on hand.

The first recipe up is one I actually just made and enjoyed. Naturally, feel free to add more garlic, or less if you’re so inclined. In fact, add more or less of any of the ingredients – custom fit it to your own tastes. Made as I did, here, the tuna fish flavor is delightfully front and center. Just be sure to leave in the lime – it adds a beautiful little kick.

Red Beans and Tuna Fish Salad

15.5 oz can Red Beans
5 oz. can Chunk Light Tuna in water
1 tablespoon Olive Oil
1 chopped green onion (white and green parts)
A couple of cloves of garlic, minced OR 1/4 tsp Garlic Gold Sea Salt Nuggets
Juice from 1/2 a lime

Combine all of the ingredients and eat to your heart’s content. Literally. I used 1/4 tsp Garlic Gold Sea Salt Nuggets (review of Garlic Gold products and recipes coming tomorrow) in my recipe, but you could substitute minced garlic.

If you’d like a little crunch, add whole wheat croutons.

Not only do I passionately collect cookbooks, the first section I head for at the library is the cookbook aisle.  I’m obsessed with recipes, cooking, and everything remotely connected to food.

Could you tell?

The wonderful thing about checking cookbooks out at the library is you get to take them for a “test drive” and see if they warrant a trip to Amazon.   With some cookbooks, I only find a couple of recipes that interest me, so I simply jot them down on a recipe card. However, other cookbooks, such as  Ellie Krieger’s cookbooks (each and every one!), send me to Amazon.com faster than payday sends me to the store. With speed that breaks the sound barrier.

The most recent cookbook to pass the “test drive” was Ellie Krieger’s Comfort Food Fix: Feel-Good Favorites Made Healthy.  I realized there wasn’t enough ink in the house to record all of the recipes I’d want to make in this particular cookbook, so I put my pen away and told Ellie’s lovely face I’d see her on Amazon.

Soon.

The first recipe I made from this cookbook was the Roasted Red Pepper Hummus.  Like all results from an Ellie Krieger recipe, the hummus was phenomenal.

Roasted Red Pepper Hummus

1 larger roasted red pepper, drained and rinsed if jarred
1 clove garlic, minced
1/2 teaspoon salt, plus more to taste
One 15 oz can chickpeas, preferably low-sodium, drained and rinsed
2 tablespoons tahini
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil, plus 1 teaspoon for garnish
1/4 teaspoon ground cumin
2 tablespoons water

Finely chop 1 tablespoon of the roasted red pepper and reserve for a garnish. Coarsely chop the remaining roasted red pepper.

Using the broad side of a knife blade, mash together the garlic and the 1/2 teaspoon salt to form a paste.  Place the garlic paste, chickpeas, tahini, lemon juice, 2 tablespoons of the oil, the cumin, the water, and the roasted red pepper into a food processor and process until smooth.  Season with additional salt to taste.

Place the hummus into a serving bowl and garnish with the reserved red pepper.  Drizzle the remaining 1 teaspoon oil over the top.  Hummus will keep for about 1 week in an airtight container in the refrigerator.

Yield: 8 servings

Stir-fry Cabbage with Mustard and Chives

6 cups cabbage, cut into approximately 1 inch squares (about 1/2 head)
1/4 cup water
1/2 ActiFry spoon extra virgin olive oil
1 1/2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon kosher salt
3 teaspoons chives, minced

Whisk together the water, olive oil, mustard, sugar and salt. Place the cabbage in the ActiFry and drizzle the sauce on top. Cook for 15 minutes or until tender-crisp. Top with minced chives.

I recently had the pleasure of reviewing a bag of Oh Nuts Candy Coated Almonds.  Being a complete nut fanatic, I couldn’t wait for the bag to arrive in the mail. When it did, it took me all of 2 seconds to tear into it. I was probably on my third candy coated almond before the mail carrier was off of our street.

I have no shame when it comes to nuts, coffee, chocolate, or catfish. No shame whatsoever.

My mind has been buzzing over the many uses for these wonderful and beautiful candy coated almonds. I’m afraid that the pictures here just don’t do them enough justice. They’re so bright, shiny, and colorful!

Below are just some of the ways I’ve come up with for enjoying these little lovelies.

Blue and White Candy Coated Almonds

  1. Celebrate March Madness with your favorite team’s colors. I bleed UK Wildcat’s blue and white, so it’s little wonder that I chose these two colors! Leave the delicious candy coated almonds in candy dishes, throw them in a bowl with fresh popcorn, or use them to spell out your team’s initials on top of a cake.
  2. Use colorful candy coated almonds in Easter baskets and/or as Easter decorations.
  3. During baseball season, choose the colors of your favorite team. I’d have St. Louis Cardinals’ colors in baskets, candy dishes, bowls, etc.
  4. These beautiful candy coated almonds would make excellent wedding favors. There are countless wedding favor bags and boxes available.  Simply order candy covered almonds in the chosen wedding colors and fill the bags/boxes.
  5. These are perfect for snacks at the office. Keep the bag in your desk drawer and you’ll have healthy snacks readily available throughout the day.
  6. Fourth of July? Red, white, and blue candy coated almonds would be gorgeous on cupcakes, cakes, and cookies.
  7. You could use these almonds as favors at a baby shower, much as you would a wedding.  There are colors available that make me instantly think of baby showers: pink, blue, yellow, white…
  8. Speaking of pink, activities and fund raisers for breast cancer awareness would be a perfect fit for the beautiful pink candy coated almonds.
  9. A bag or two of candy coated almonds would be delicious additions to gift baskets, whether it’s for Mother’s Day, Father’s Day, birthdays, or Christmas.
  10. Send a few bags to your favorite college student.  We all love to send treats to those we love and, quite frankly, Oh Nuts products are PERFECT for this. Nuts travel well and won’t spoil or get “messy” like a lot of other treats. As a bonus, they’re as healthy as they are delicious!

The weather has been unseasonably nice lately, and my family and I are already thinking of firing up the grill.  There’s nothing quite like grilled hamburgers and hot dogs, so forgive us if we’re rushing things.

I used the rest of the ground beef in chili a few nights later and served the hot dogs (GREAT hot dogs!) on buns with onions and shredded cheddar.

And Mad Love for I Can't Believe It's Not Butter

At the risk of sounding like a commercial, have you tried I Can’t Believe It’s Not Butter lately?  If you read this food blog regularly, you know what a stickler I am for the flavor of real butter vs. most margarine.  However, you may also know how I’ve become as health conscious as just about anyone.  Yes, butter tastes better than most margarine or spreads – but, let’s face it,  it’s also an unhealthy choice.

I Can’t Believe It’s Not Butter makes both mes happy: The butter-loving cook and the health conscious wife/mother/mother-in-law.  By the way, this isn’t a sponsored post or paid advertisement in any way, shape, or form.  I thought I’d throw that it because it’s sounding like one, isn’t it?!?!

It’s just me giving my honest opinion and advice: If you’re also a stickler for the taste of butter, you HAVE to switch to I Can’t Believe It’s Not Butter. Veggie Brown Rice and Orzo PilafVeggie Brown Rice and Orzo Pilaf

2 Tbsp. I Can’t Believe It’s Not Butter!® Spread
1 small onion, chopped
2 medium red, yellow and/or orange bell peppers, finely chopped
1 carrot, finely chopped
1/8 tsp. salt
1/8 tsp. ground black pepper
1/8 tsp. dried thyme leaves, crushed
1 cup uncooked brown rice
2-1/4 cups chicken broth
1 cup uncooked orzo pasta, prepared according to package directions
2 Tbsp. finely chopped fresh parsley (optional)

Melt I Can’t Believe It’s Not Butter! Spread in 3-quart sauce pot over medium-high heat and cook onion, red peppers, carrot, salt, pepper and thyme, stirring frequently, 4 minutes or until vegetables are tender. Stir in rice and cook 3 minutes. Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 25 minutes or until rice is tender. Let stand 5 minutes. Stir in hot orzo and parsley.

Zucchini Parmesan Crisps, an Ellie Krieger Recipe

I gotta tell you, I LOVE Ellie Krieger recipes.  They’re always delicious, always fun to prepare, and always healthy. How could  you possibly ask for more?  The following recipe is from A Bullseye View and, by all appearances, Ellie Krieger has waxed brilliant again.

Apparently it’s how she rolls.

Cooking spray
2 medium zucchini (about 1 pound total)
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4 ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
Freshly ground black pepper

1. Preheat the oven to 450 degrees. Coat a baking sheet with cooking spray.

2. Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with oil.

3. In a small bowl, combine the Parmesan, breadcrumbs, salt and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick.

4. Place in a single layer on the prepared baking sheet. Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula, serve immediately and snack away!

At a time when we’re all counting calories, this beautiful snack is especially welcome.  I’m hooked on fried pickles, and these look like a healthier alternative.

Unless you’re a soup fanatic like me, your answer could lie somewhere between, “Been awhile” or “You’re kidding, right?” This health food review – a review of Dr. McDougall’s Soups – is for all of us, soup addicts and soup newbies, alike. Those of us who eat soup pretty much on a daily basis have a  deliciously healthy new soup to enjoy and those who don’t eat soup regularly are about to gain a new incentive to do so. 

This health food and soup loving junkie had reason to do a happy dance across the kitchen floor about a month ago. I was sent a box filled with Dr. McDougall’s Right Foods ready to serve soups. In fact, I had one last night for supper, the delicious Ready To Serve Black Bean Soup – Gluten Free. I heated the soup and served, filled our bowls, then topped it off with a little sour cream and chopped cilantro.

Delicious!

I built the entire meal around this healthy, hearty, and delicious soup. Make no mistake about it, it was the star of the show.  Each soup I’ve tried has been exceptional and each time I’m left thinking, “This tastes like soup you’d get in a restaurant, not one that’s waiting for you in your pantry.”  They’re that outstanding.  Even better, they’re incredibly healthy.  A bowl of one of Dr. McDougall’s soups, along with a tossed salad or bowl of cottage cheese and fruit is a beautifully healthy, filling, and delicious lunch.

Can you even imagine how much better this meal would be for you than a burger and fries?!?!

Not only is it the right way to eat for you and me… it’s the right way to feed our families. If healthy food tastes good, kids (and husbands!) will eat it.  End of story.  Our mission, if we choose to accept it, and we do, is to find the healthy foods that have as much taste going on for them as they do nutritional value.

That’s why I”m so excited about these soups, they have it all going on.  I even love that they don’t come in cans!

Prevention Magazine had this to say about the Black Bean Soup: “This hearty blend of black beans, vegetables and organic brown rice kept testers full for hours. There’s just the right amount of spice and cilantro adds great flavors” and Better Homes and Gardens called the vegetable soup “…one of the best store-bought vegetable soups we tasted.” If it was just “one of,” I’m dying to know what the others were!

Making good, healthy choices today (again, for ourselves as well as the people we love to distraction) means healthier tomorrows.   One day last week I found myself having what I thought was a “burger craving.”  I even considered running to the nearest drive through and ordering the biggest burger they had.  Instead, I walked to my pantry, and invited Dr. McDougall’s Organic Tortilla Style Soup to lunch.  I ate my bowl of DELICIOUS soup with with a green onion, a glass of iced green tea, and a smile.
