Cheddar Purses with Jalapeno Wallets

by Joi on June 20, 2005

Okay, sorry for the cutesy title….couldn’t resist!

1 can biscuit dough (I prefer Hungry Jack, buttermilk for this recipe)
10 (from a jar) jalapeno slices
shredded cheddar

Pre-heat oven to 350 degrees. Spray your cookie sheet with cooking oil spray - or lightly grease. Separate the biscuits. Using your hands, flatten each into rectangular-shaped pieces. Don’t worry about them being too flat . sprinkle a fairly generous amount of cheddar onto each piece, from end to end. Now put a jalapeno slice in the center of each.

Fold one end into the middle, then the other end over it, creating a square. Seal the top end well to keep the contents from falling out. Bake. It won’t take as long as the biscuit can’s directions indicate - so keep an eye on the purses.

These are wonderful served alongside the Nacho Cheese Soup.
