Chocolate Chip Buttermilk Pancakes

1 cup sifted all purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 egg, lightly beaten
1 cup buttermilk
2 TBS melted butter
1 cup semisweet chocolate chips

In a mixing bowl, combine the first 3 ingredients. In a separate bowl, beat eggs with buttermilk and melted butter until blended. Combine the two mixtures and stir just until the dry ingredients are moistened - don’t overstir.

Stir in chocolate chips.

Cover batter and set aside for 20 minutes - at room temp. Lightly butter a pancake griddle or large skillet. Drop about 1 TBS of batter onto hot griddle for each pancake. Bake until bubbles form on top and edges are golden brown. Turn and cook until the pancakes are cooked through.

My oldest daughter, Emily, has always been a big breakfast eater. When she was barely walking, each morning she’d toddle at top speed to her high chair chanting, “Eat, eat, eat!!!” On the way pass the tv, she’d point her little finger in its direction which was my cue to hook her up with a little entertainment while she waited for, and was enjoying, her breakfast.

My other daughters (Brittany and Stephany), however, have never been that into breakfasts. Unless, of course I’ve made homemade doughnuts OR these pancakse. Then they very much forgive breakfast for being breakfast. Topped with butter, syrup, and just a little whipped topping - Britt and Steph don’t leave the table for an hour! Em? Two hours.
