Cider-Glazed Carrots

by Joi on December 28, 2005

1-1/2 pound carrots, cut into 1/2 inch chunks
1 Tbs. unsalted butter
1/2 tsp. salt
1/2 cup water
2 Tbs. Boiled Cider
1 Tbs. cider vinegar

Place the carrots, butter, salt, and water in a medium saucepan with a cover. Bring to a boil over medium heat. Reduce heat to medium-low, and cook for about 10 minutes.

Uncover and add the cider and vinegar. Raise the heat to high and allow the liquid to reduce to a glaze that just covers the carrots. Swirl the pan occasionally to evenly coat. This should take about 15 minutes. Serve hot.

Boiled Cider can be used in countless other recipes - and even goes great on pancakes. Check out Wood’s Cider Mill.com for more information. Great stuff!
