Cornmeal Pancakes

1-1/2 cups yellow cornmeal
1/4 cup flour
1 tsp bakind soda
1 tsp sugar
1 tsp salt
2 cups Buttermilk
2 TBS oil
1 egg, separated

Comibne the first 5 ingredients. In a separate bowl combine and beat buttermilk, oil and egg yolk. Stir into dry ingredients. Beat egg white until stiff peaks form.

Fold into batter. Allow to stand 10 minutes. Pour onto greased griddle. When bubbles form on top turn and cook second side.

I actually prefer these just with butter, but syrup on them ‘taint bad.
