Creamed Carrots

This week, I’ll be adding Thanksgiving recipes to the blog - one after another. Well, that is up until Wednesday night and Thursday - I’ll be in the kitchen all day on each of those!

4 cups carrots, sliced
3 Tbs. butter or margarine
1 Tbs. onion, chopped
3 Tbs. flour
1½ cup milk
1 cup grated cheese
Salt and pepper, to taste

Preheat oven to 350°.

Cook carrots in boiling water.

Drain, then season with salt and pepper. Place in a greased casserole dish.

Melt the butter, then add the chopped onion and cook until tender. Add flour and stir constantly until the mixture is smooth. Add the milk, slowly, stirring constantly. Cook until thickened.

Add cheese and stir until melted.

Pour sauce over carrots; stir gently. Bake for 30-35 minutes. Delicious! The taste really surprises people, even those who’d normally balk at vegetable dishes can’t resist it.
