Crispy Cheese Cauliflower

Here’s a great sounding recipe from a February issue of USA Weekend:

Crispy Cheese Cauliflower:

Olive Oil spray
2/3 cup freshly grated Parmesan cheese
1/2 tsp. ground cumin
1/8 tsp. cayenne pepper
salt and black pepper, to taste
1/2 large head cauliflower, broken into pieces
2 eggs, beaten (or egg substitute)
1/2 cup finely chopped parsley
1 lemon, cut in wedges

Preheat oven to 450 degrees.

Spray cookie sheet with olive oil. In a shallow dish, combine the first 4 ingredients. Dip cauliflower in the egg mixture, then dredge each piece in the cheese mixture. Place on the cookie sheet and spray with oil. Bake for 15 minutes.

Remove to a serving plate and sprinkle with parsley. Serve with lemon.

No only is this recipe delicious, it’s easy and puts cauliflower to good use. Cruciferous veggies like cauliflower, broccoli, and cabbage are all believed to fight cancer. This particular recipe is a great side dish for fish – another food we should all be eating more of.
