Crushing on Guacamole

by Joi on July 20, 2006

There’s nothing that compares to a big fat glob of guacamole sitting on a colorful plate - just waiting to collide with a tortilla chip or chunk of meat.

Speaking of tortilla chips - stop buying them and start making them. They’re better when you make them yourself, and, heck, you’ll feel so clever. Buy the flour or corn tortillas - the smaller ones are easier to work with. Using a Pizza cutter, cut them into chip-sized wedges. Spray lightly with an olive oil-based spray, then sprinkle with red pepper flakes and bake in an oven set to a low temp. Bake them to your desired consistency. Remove from the oven and lightly salt. Salt’s not that fantastic for you, so cut back as far as your taste buds will allow you to.

Of course, you could fry these in oil rather than baking them, but that’s also not too healthy. Also, you could leave off the pepper flakes, but they’re even better if they’re included.

Below are two links that’ll carry you to two recipes featuring guacamole. Too good to pass up? Too good to pass up.
