Double Cornbread

1 cup cornmeal
1/2 tsp salt
2 tsps baking powder
1 TBS sugar
1/2 cup vegetable oil
2 eggs, slightly beaten
1 cup creamed corn
1 cup sour cream

Combine cornmeal, salt, baking powder and sugar. Stir well.

Add remaining ingredients, mix well. Pour into a greased, preheated pan or muffin tins. Bake at 400 degrees for 25-30 minutes or until browned.

Served alongside navy beans (or pinto or great northern) topped with Chow Chow….. ’tis a beautiful thing!
