Easy Brushetta

Slice a loaf of store-bought French Bread for the bread slices in this recipe.

3 tablespoons olive oil
1 tablespoon chopped fresh basil - OR 1 tsp dried basil leaves
1/2 teaspoon finely chopped fresh garlic
16 slices bread - 1/2 inch thick
4 small tomatoes, finely chopped
2 green onions, thinly sliced
1/4 cup Mozzarella cheese, shredded

In a small bowl, stir together the olive oil, basil and garlic (the aroma is unbelievable). Spread about 1 teaspoon of this mixture on one side of each bread slice. Place slices on a baking sheet, then place under the broiler 6 inches from the heat. Broil until lightly toasted on each side - about 1 -2 minutes.

Spoon tomatoes onto tops of each bread slice. Top each with about 1 teaspoon green onions and about 1 1/2 teaspoons cheese.

Continue broiling until cheese is melted, 1 - 2 minutes.

Serve with any sort of pasta dish or an awesome salad.
