Easy Buttermilk Jam Cake

2 cups blackberry jam
1 cup vegetable oil
2 cups sugar
1 cup buttermilk
1 tsp. baking powder
3 eggs
½ tsp. allspice
1½ tsp. cinnamon
2 cups pecans
3 cups All-Purpose Flour

Mix all ingredients well. Bake at 350° for 1 hour in a greased tube pan or two 9″ pans. Ice with your favorite Jam Cake Frosting. (I’ll post my favorite icing this afternoon.)

Wow! What a great way to use up all those jams I’ve collected from farm fairs etc! Maybe marmalade and almonds, too? Many thanks!! Alanna
