Easy Crock Pot or Oven Meatloaf
2 pounds lean ground beef
2 eggs
2/3 cup oatmeal
1 package dry onion soup mix
1/2 cup ketchup
Set aside 2 Tablespoons of the ketchup.
Combine beef, eggs, oats, soup mix, and remaining ketchup. Shape into a round loaf for crock pot or an oblong loaf for the oven.
Place inside your crock pot, top with remaining ketchup, cover and cook on low for 8 - 10 hours or on high for 6 - 8. If you’re baking it in the oven, place the loaf into a suitable loaf pan, top with the reamining ketchup and bake at 350 degrees for 1 hour and 15 minutes. (If it appears to be browning too fast, cover it with foil.)

I absolutely, positively love good meatloaf. I try out just about every recipe that I ever come across, but the best one I’ve ever had was the one on the back of a Heinz 57 Steak bottle. Then again, I love that stuff so much I dip fries in it, put it on burgers, dip hot dogs in it….everything short of drinking it from the bottle.
On Throwdown with Bobby Flay tonight, he’ll be making meatloaf. So, of course, I’ll be there watching every minute - wishing I had some. The main thing about meatloaf is that you have to make sure you leave some for the next day. Meatloaf sandwiches with Heinz 57….or ketchup for you non 57 addicts….is the stuff the gods feast on.
It’s what they have with their coffee.
