EggNog Pancakes

Even if EggNog isn’t your cup-of-custard, I think you may just like these pancakes. Personally, I don’t like them quite as well as the Buttermilk Pancakes (I’ll post the recipe for that one in a day or two.) I normally make, but they are really good. Besides they taste wonderfully like autumn and holidays!

2 eggs
1 3/4 cups eggnog
1/4 cup oil
1 1/2 tsp vanilla
1 3/4 cup flour
1 tablespoon sugar
4 tsp baking powder
1/2 tsp salt
3/4 tsp Pumpkin Pie Spice

Combine the eggs, eggnog, oil and vanilla in a large bowl.

Sift together the dry ingredients. Add to eggnog mixture and mix just until everything’s blended - don’t whip it, beat it, bang it or overstimulate it in any way. (Pancake, waffle and cornbread mixtures actually prefer less affection. )

Add more eggnog if you don’t have the consistency you like.

Pour by 1/4 cupfulls onto hot griddle - turn when bubbles form around edges of pancakes.

Serve warm. Makes about 15 pancakes.

Oh, btw, if your store doesn’t have EggNog or Custard out yet in the dairy case, you can probably find canned eggnog in the baking aisle. I use the one made by Borden. The recent cans have some sassy sounding recipes on the back of them - one for Pound Cake and a French Toast one.
