Every Ghoul’s Favorite Halloween Cookies

Blue ghoul in some killer green shoes

1 box yellow cake mix
2 eggs, beaten
1 stick margarine
3 cups miniature marshmallows

Mix and press the first three ingredients into a 9 x 13 inch greased pan. Bake at 350 degrees for 18 - 20 minutes. Remove from oven and sprinkle the marshmallows on top. Return to oven and bake until the marshmallows are melted. Keep an eye on it, overly-browned marshmallows are nasty business.

Melt the following together:

1 12 oz. pkg. peanut butter chips
1/2 stick of butter
2/3 cup white Karo syrup
2 tsps. vanilla

When melted, add:

2 cups dry roasted, unsalted peanuts
2 cups Rice Krispies

Spread on top of the marshmallow mixture. Slightly press down. Cool, then cut into squares.

These freeze really well, so you could make a double batch - freeze one and devour the other. When Christmas rolls around, you can bake them and call them Every Elf’s Favorite Christmas Cookies.

These are really delicious. They taste like a candy bar exploded on top of a cookie, which excites my taste buds more than just a little.
