Fudge Sundae Pie

by Joi on July 7, 2006

1/4 cup corn syrup
2 TBS brown sugar
3 TBS butter
2-1/2 cups Rice Crispies

Combine syrup, sugar, and butter and cook over low heat until the mixture begins to boil. Remove from heat and add the Rice Crispies. Press evenly into a pie pan.

Now, Mix:
1/4 cup peanut butter
1/4 cup fudge sauce
3 TBS light corn syrup
chopped nuts, optional

Spread half of mixture over crust. Spread 1 quart vanilla ice cream over mixture. Freeze.

Before serving, warm remaining sauce and drizzle on top! Top with chopped pecans or walnuts and a fat dollop of whipped topping.

I thought this would make a great weekend dessert. Hope it makes your taste buds dance!
