Planning Thanksgiving and Christmas meals has always been a BIG DEAL in our home. I have to admit, I actually start thinking about these meals (as well as the desserts and other “goodies”) weeks in advance…. there are still leaves on the trees when I actually start pulling my recipes together and deciding what delicious additions will work their way onto the table.
This year is an extra challenge. Thanks to health reasons, my oldest daughter (Emily) and I have to eat gluten free now and this will actually be our first Thanksgiving and Christmas as “gluten freebies.” Thank God for all the wonderful products on the market! Thanks to them, we won’t have to do without cookies, cakes, rolls, dressing, or even green bean casserole – we’ll just have different versions, that’s all.
I’ll also be adding a couple of exciting new sides to our Holidays, such as the glazed carrots shown here. Carrots are always a hit in our family and the extra flavor in these will make them a regular guest in our kitchen – holidays or not!
Seville Orange Glazed Carrots
2-1/2 cups of 1/2 inch crinkle cut or plain sliced carrots
3 tbsp Crofter’s Seville Orange Just Fruit Spread
1 tbsp fresh grated ginger
2 tbsp frozen orange juice concentrate, thawed
1 tbsp butter or margarine
In a medium saucepan, cook carrots covered in lightly salted boiling water for 3 minutes. Drain and set aside. In the same saucepan over medium heat, combine Crofter’s Organic Seville Orange Just Fruit Spread, ginger, orange juice concentrate
and butter or margarine and stir until melted.
Return carrots to saucepan.
Cook uncovered, over medium heat for 5 to 6 minutes or until carrots are just tender and glazed, stirring occasionally.
