Halloween Divinity

2 cups sugar
1/2 cup white corn syrup
1/2 cup water
2 eggs (stiffly beaten)
1 tsp vanilla
1/2 cup walnut or pecan halves

Combine the sugar, syrup, and water in a saucepan and place over low heat. Stir until sugar is dissovled; turn the heat up to medium. Let boil, without stirring, until it reaches the hard boil stage (either on a candy thermometer or a little drop forms a hard ball when dropped into cold water.)

Remove and pour into the 2 egg whites that have been stiffly beaten, beat continually as you slowly add the syrup mixture.

Continue beating until the candy holds its shape and loses its gloss. Add vanilla and orange food coloring. Spoon drop onto foil or waxed paper and place a walnut or pecan in the center of each.

Don’t even think about making these on a rainy day – they’ll break your heart, break your spirit, and send you running from the room screaming.

Mix things up this Halloween with something no one will be expecting – Divinity. They’ll all be looking for it a few months down the road, so imagine their surprise (and extreme pleasure) when they see it sitting on a platter just for them. I wanted to make this candy yesterday, but it was kind of rainy – and candy, of course, refuses to cooperate on rainy days. If I’m able to make it today, I’ll post a picture later.
