Heavenly Southern Okra

1 cup cut okra
1 medium onion, chopped
1/3 cup vegetable oil
3 tomatoes, peeled and quartered OR 1 cup canned tomatoes
1 TBS sugar
1 tsp. flour
1/2 tsp. salt
1/2 tsp. pepper

Cook okra in boiling, salted water for about 10 minutes. Drain.

Brown onion and green pepper in oil; add tomatoes and cook slowly for 5 minutes. Add okra and the remaining ingredients.

Cook over low heat until vegetables are just tender, stirring as little as possible. Yield: 4 servings

Use less or more salt and pepper - to suit your own taste. Also, if you leave the green pepper out, you won’t hurt my feelings one bit.

I am just so glad vegetable are finally “coming in”. Of course, when you said southern okra, I was expecting fried!
