Cheese Ball

by Joi on November 9, 2005

2 8 oz packages cream cheese, softened
2 tablespoons minced onion
1/4 cup crushed pineapple (drained)
1 tablespoon green bell pepper (finely chopped)
1 tablespoon red bell pepper (finely chopped)
2 tsps seasoned salt
2 cups chopped pecans (divided)

Combine cream cheese with the next four ingredients and 1 cup of the pecans. Mix together with your hands until well blended. Form into a ball and roll in the remaining pecans.

Chill at least 2 hours to combine the flavors. (amazingly important)

Remove from refrigerator 30 minutes before serving.

Serve with crackers. I use the red and green pepper combination because it’s purdy and festive, feel free to go with all of either, or use a yellow pepper even - just try to keep your combination around 2 tablespoons or you’ll overpower the cheese and nuts.
