Hummingbird Cake

I have no idea, really, how this cake got its name - if anyone knows, I’d love for you to tell me!

It is beyond delicious, though - perfect with coffee. Then again, everything achieve the status of perfection when paired with coffee.

HUMMINGBIRD CAKE

3 cups all purpose flour
2 cups sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
3 eggs
1-and-1/2 cups oil
1-and-1/2 tsp. vanilla
1 8 oz. can crushed pineapple
1 cup chopped pecans
2 cups chopped bananas

Combine flour, sugar, salt, soda and cinnamon. Add eggs and salad oil, stirring until dry ingredients are moistened. Do not beat.

Stir in vanilla, pineapple, pecans and bananas.

Spoon batter into 3 greased and floured 9 inch cake pans.

Bake at 350° for 25 to 30 minutes or until cake is done. Cool 10 minutes.
