Iron Skillet Dutch Pancakes

3 eggs
1 1/2 cups milk
3/4 cup sourdough starter
1 cup all-purpose flour
1/4 cup sugar
2 tablespoons vegetable oil
1 teaspoon salt

Preheat oven to 425 degrees. Grease a 10 inch iron skillet. Blend, with an electric mixer, all ingredients together until smooth.

Pour batter into prepared skillet and bake for 10 minutes.

Reduce temp to 350 degrees and bake until golden brown – about 25 minutes longer.

Cut into 6 wedges to serve.

REALLLLLY delicious when served with fruit and a little whipped topping.
