Jalapeno Bean Dip

2/3 cup sour cream
1 (16 oz.) cans refried beans
1 whole Jalapeno pepper, minced (from a can or jar)
1 tbsp. Jalapeno pepper juice
1 tsp salt
1 tsp garlic powder
shredded cheese (cheddar, or my favorite white cheddar)

Combine all of the ingredients. Cook over low heat; stir until smooth. Put the cooked mixture into a flat dish (like a flan dish) and cover with shredded cheese. Pop into the microwave for 1/2 to 1 minute on hight to melt cheese. Serve with tortilla chips.

You could also snip a little cilantro on the top, after the cheese had been melted. I love cilantro more than the average person, so I literally have to watch myself - or I’d put in in just about everything. I’ve experimented with it in nearly every dish you can imagine - except for desserts, of course.

Believe it or not, cilantro mixes beautifully with eggs - in omelettes, scrambled eggs, deviled eggs, etc. YUM!
