Healthy Broccoli Recipe With a Hint of Garlic

Lemon Steamed Broccoli Recipe

1 (1-1/2 pound) bunch broccoli
1/2 cup butter
2 TBS lemon juice (extra style points for freshly squeezed)
1/4 tsp freshly ground pepper
salt, to taste
1/4 tsp garlic powder

Separate broccoli into spears, remove the tough ends and leaves, and wash thoroughly.

Arrange broccoli in steamer basket or electric steamer and steam according to directions for broccoli – usually between 8 and 10 minutes, but don’t over-steam. You want the broccoli to retain its strong will… Heaven help the cook who serves wimpy broccoli.

Set aside.

Combine butter (not margarine unless it’s an emergency) and the remaining ingredients in a saucepan; bring to a boil.

Pour over broccoli and enjoy!

Feel free to substitute asparagus (my husband’s favorite), carrots, or cauliflower for the broccoli.  My personal favorite would be a combination of all the above.   YUM!

This sounds like a really yummy and simple recipie! I like that I can substitute it with carrots, cauliflower, or asparagus. I think offereing up healthy recipies is a good way to get people to stick to their new Year’s resolutions for eating healthier, especially whole foods! =]
