Mexican Coleslaw

MEXICAN COLESLAW!

4 cups shredded cabbage
1 (12 oz) can whole kernel corn
About 1/2 cup chopped green pepper
1/2 cup onion, chopped
1 cup cubed sharp cheddar cheese
1/4 cup sliced black olives

DRESSING:
1 cup mayonnaise
2 TBS sugar
4 tsps mustard
1 TBS vinegar
1/2 tsp celery seed

Mix dressing ingredients well and stir into slaw mixture. Chill and serve.

If you’re looking for something new to serve with tacos - a change from rice or tortilla chips & salsa…this is a really nice change of pace. Very unexpected and surprisingly delicious.
