Mexican Hot Chocolate

2 ounces unsweetened chocolate
1/2 teaspoon ground cinnamon
2 1/2 cups milk
2 tablespoons sugar – more if needed!
1/2 teaspoon vanilla extract

Melt the chocolate over very, very low heat (I use my crock pot for melting chocolate. Less surprises.), stirring constantly. When the chocolate is almost melted, stir in the cinnamon. Turn off the heat, set aside and allow to cool. As it cools, the rest of the chocolate will finish melting.

Pour the milk and sugar into a medium pan and place over medium-high heat, stirring occasionally. When the mixture begins to bubble around the edges, remove from the heat. Stir in the melted chocolate and vanilla.

Using a whisk, beat until the mixture is foamy.

Pour heaven into your cups and serve immediately. Add more sugar, if desired. You could also add a dollop of whipped topping or marshmallows, if you wanted to really show off.
