Moist Orange Juice Cake

by Joi on July 30, 2006

1 box yellow cake mix
1 cup orange juice
4 eggs
1 cup vegetable oil

Mix all ingredients well and pour into a bundt pan. Bake at 350 degrees for 20-25 minutes.

GLAZE:
1 stick margarine
1/2 cup orange juice
1 cup sugar

Prepare glaze 5 minutes before cake is done. Mix all the glaze ingredients over heat until the mixture boils.

Remove the cake from the oven and pour the glaze on top (while the cake’s still in the pan). Let stand for 15 minutes then turn over out of the bundt pan.

TRUST ME, this is a cake you’ll want to make asap. It’s that special. The first time I made it, I did it just like the recipe above says. The most recent time (yesterday), however, I added a little more Orange Juice to the glaze and used it individually on each slice – drizzling some over each serving. Outstanding!

You could also make this cake in a “sheet cake” pan, cut it up into small squares and stick toothpicks in the center of each square. Then you could serve the glaze as a dipping sauce.

The cake’s unbelievably moist and flavorful – it tastes SO elegant and elaborate , yet the simple little recipe is one of the easiest cake recipes you’ll ever find. Make a point of trying this one this week.

And, one more thing, don’t skimp on the Orange Juice brand. Get the good stuff, you’ll taste it in every bite!

I’ve heard the same thing from people in other parts of the world, as well. I think here in the states we tend to forget that if we can get something in the store – it doesn’t mean everyone else can.

I’ll try to add more recipes that have ingredients that are more easily gotten. Thanks so much for leaving a comment, it’s VERY GOOD to get input from everybody. Thanks!

I’d be glad to go post a comment! I’m afraid I don’t unerstand a single word on your blog – but I read the beautiful pictures loud and clear!

I like the philosophy of “do it yourself or don’t eat it.” There’s a great deal of wisdom in that saying!

I make this alos but use a lemon or orange cake miz and I live in Florida so I squeeze my own orange juice and also add a little of the grated rind (zest) for addded flavor. I have never yet anyone who ddi not love this cake and you are right that is it so easy and yet seems simply elegant in the bundt pan shape.

Family loved this recipe. I poked small holes in the cake with a skewer before pouring the glaze over, and it made it really extra moist

Brenda – what a brilliant idea! I’ll do that the next time I make this cake (which will probably be in about 30 minutes – I’m craving it now!).
