One Potato, Two Potatoes

You probably already know the microwaved potato trick (prick the top with a fork and nuke until it’s as soft as you want it - anywhere between 5 - 10 minutes. ) But have you ever tried it with a sweet potato? Same routine. Same butter. Hold the Sour Cream.

Whichever potato you choose, you’re having a really healthy side dish, or meal if it’s a great big potato! Each potato has virtually no fat. They each also provide you with potatssium, as well as other vitamins and minerals.

The sweet potato has nearly twice the fiber as well as more bet-carotene, while it’s only a tiny bit higher in calories - unless you pile on the marshmallows and pecans. Yeah, me too.

When you’re eating white potatoes, be sure to leave on the skin - that’s where the good stuff is, including most of the fiber.
