EASY POPCORN BALLS

2 quarts popped popcorn (in a large bowl, set aside)
1 cup packed brown sugar
One-third cup water
One-third cup dark corn syrup
¼ cup butter (no substituting with this recipe!)
½ tsp. salt
1 tsp. vanilla extract

In a heavy saucepan, combine all the ingredients except for the popcorn and vanilla extract. Bring to a boil (over medium heat), stirring CONSTANTLY. Continue cooking (without stirring) until it reaches the “soft-crack stage”, or 270° on the candy thermometer.

Remove the saucepan from the heat and stir in the vanilla. Pour over the popcorn, stir evenly to coat. As soon as you can handle the popcorn without burning your hands, shape into balls. Allow to “harden” on waxed paper. It won’t take long!

Yield: 6 servings
