Quick and Easy Salmon Patties

1 can (14-3/4 ounces) salmon, bones and skin removed
1 egg
1/3 cup minced onion
1/2 cup all purpose flour
1-1/2 teaspoons baking powder
1/2 cup finely crushed crackers or dry bread crumbs
Crisco for frying

Drain the salmon, setting aside 2 TBS of the liquid.

In a medium-sized bowl, combine the salmon and 2 TBS liquid, the egg, onion, flour, and baking powder. Mix well. Form inot small patties and coat the patties with crushed crackers.

Heat the oil in a large, heavy skillet. Fry the patties until golden brown on both sides – about 3 minutes per side. Drain well and keep warm while frying the rest. Serve warm.

I love to serve lemon wedges with salmon patties – a little splash of lemon goes perfectly with salmon.

First off, I’m lucky to have found your blog. I don’t do really well in the kitchen. However, I’ve noticed that the recipes that you’ve included in your blog are quite easy to prepare. I prepared the salmon patties for my mom. She loves it. She also loved the lemon idea. Thanks!

Yummm! I love fish. Salmon is my favorite among them all! I’ll surely try this recipe by next week when I’m on leave from work. By that time, I’ll have lots of time to whip up the different seafood recipes I found. Thanks for posting this!
