Sourdough Pancakes

1 cup sourdough starter
1 1/2 cups milk
2 cups all purpose flour
1 egg
2 tsps baking powder
1/2 tsp salt

The night before: In a medium glass bowl, stir together the starter, milk and 1 cup flour. Cover and refrigerate.

To Prepare: Preheat and grease your griddle. To the sourdough mixture, beat in the remaining ingredients. Pour batter by 1/4 cupfuls onto heated griddle. Cook aout 2 minutes on each side until both sides are a light golden brown.

Makes about 12 pancakes.

This recipe can be mixed and made on the same day, but th flavor is quite a bit better if the batter is mixed the night before.
