A while back, a super friendly woman contacted me about doing a post on my food blog highlighting SkinnyPop Popcorn. Since it was a brand I already bought regularly, I was more than glad to help spread the word.  This isn’t a sponsored post – nor did I receive any popcorn to sample. I bought my own, as I regularly do.

Let me tell you a little secret about us food bloggers… we are regularly sent food products to review (whether we’re sent the product or a voucher, we’re compensated for the time we spend telling our readers about the food). If you see one of my kind (food bloggers) giving a “shout out” to a product for which we didn’t even receive a coupon for… mark it down… it’s one we’re already buying and loving.

There are just certain “staples” you grab each week at the grocery store, right? SkinnyPop popcorn is one of my favorite staples.  I regularly grab bags of their Original as well as their Sea Salt and Pepper. The Sea Salt and Pepper is actually my favorite – guess it’s because I’m a pepper fanatic, huh?

Popcorn is one of my favorite snacks, period. It’s delicious, fun to eat, doesn’t make a mess (unless you cover it with caramel or chocolate… then it’s shall we say a mess that’s worth it!), and nutritionally sound.

I almost always have a huge bowl of SkinnyPop popcorn on the table or counter – so anyone who passes by can grab a handful and crunch their little hearts out. It’s a great way to hold off the hungries until mealtime and I’d much rather my loved ones grab popcorn than greasy chips or sugar-coated snacks.

My husband and I often invite popcorn into the den when watching television in the evening or on weekends. A baseball game without popcorn? I don’t think so!

SkinnyPop Popcorn with Melted Ghee… HOLY CATS!!

I recently happened upon what is now one of my favorite things in the world: SkinnyPop popcorn with melted Pink Himalayan Salt Ghee – naturally, you can just use regular ghee and add a little Himalayan Salt at some point in the melting or drizzling process, but I’d HIGHLY recommend the ghee pictured above – 4th & Heart Grass-Fed Ghee with Himalayan Pink Salt. It’s on Amazon (what isn’t, right??) but I’ve also found it easily in Meijer’s and Kroger.

Again, any melted ghee would be fantastic, but this one is my “go to” for many things in life.

Since I first melted ghee and used it on popcorn, I’ve never used traditional butter…. and I LOVE traditional butter as much as anyone. Ghee is just perfectly perfect for drizzling on popcorn and I could go on and on about how delicious it is.   That, however, wouldn’t get the point across nearly as well as if you simply try it for yourself.

You’ll be as blown away as me and, yes, you may even exclaim HOLY CATS too.

One of the things I like about SkinnyPop so much is the fact that it’s….

  1. … not Microwave Popcorn. Studies have shown that the majority of microwave popcorn is horrible for you.
  2. ….. doesn’t mess up dishes or call for vegetable oil.
  3. …. doesn’t mess up my hot air popcorn popper.

It’s healthier than most snacks, healthier than all microwavable popcorn, and it doesn’t mess up a single thing. I also love that they print Gluten Free in huge letters on the front. They’re proud to be gluten-free and that makes me smile.

While my absolute favorite way to eat SkinnyPop Popcorn is straight outta the bag (or bowl, if that’s where it’s hanging out at the time), I do like to get a little jazzy from time to time.

In addition to melted ghee (please, please try this – trust me it’s too good for its own good), below are some of my favorite ways to have fun with popcorn.

  • I first fell in love with pouring M&Ms into popcorn at the theater many, many, many moons ago. I was trying to hold onto a huge bucket of popcorn (I go all out with theater popcorn, guys) and a box of plain M&Ms, while freeing up a hand to control my Diet Coke – yes, I’m that girl who has buttery popcorn, candy, and drinks a Diet Coke to wash it all down. At least I used to, that is. I gave up Diet Coke but candy and popcorn? NEVER. I decided that I either had to get creative or grow a third hand. I got creative. I poured the M&Ms into the bucket of popcorn and something legendary was born. Since that day (seriously, it must have been at least 25 years ago), I always have M&Ms in my popcorn at the theater. I often do the same at home. If you buy the “Baking M&Ms” bag, you’ll get more candies for your buck – plus they’re smaller, so you get more with each handful.
  • Lawry’s Seasoned salt is great on popcorn – plus it gives it a funky cool color.
  • Grating dark chocolate or white chocolate onto popcorn is also a darn tasty way to go.
  • Nuts are incredibly good for you, so I like to sneak them into our meals and snacks any way that I can. Tossing pecans, almonds, macadamia nuts, walnuts, or pistachios into popcorn just ups the nutritional boost. Smart and delicious.  I also like to toss in fried fruit sometimes. Experiment with the combinations of dried fruit and nuts for something extra special. One of my personal favorite combos is dried cranberries, almonds, and macadamia nuts.  If I have any on hand, I’ll throw in some white chocolate morsels too.
  • Cayenne pepper (if you like a little heat) and grated lime are a great combo for popcorn. The flavors go together perfectly.

You can find SkinnyPop in your grocery store or your favorite super store. I just noticed on their website that they’ve added to their line of popcorn – I’ll have to keep my eyes out for these new varieties in my store. You can also find SkinnyPop on Amazon.  I’ve kind of fallen in love with ordering food along with whatever I’m ordering on Amazon.  Makes delivery day even sweeter.

You can also find the 4th & Heart Grass-Fed Ghee with Himalayan Pink Salt on Amazon.  It’s EXCELLENT on toast and chocolate as well as popcorn. Think I need a little popcorn with melted ghee right about now…

Gluten Free Snack Review: Delicious Wyld Strips

One of my favorite things under the sun is potatoes – white potatoes, Yukon Gold potatoes, sweet potatoes… you say “potatoes” and you have my undivided attention.  Sweet potatoes are kind of the dessert of the potato world, which means they have a very special place in my sweet-tooth-inclined heart.  So when I got a chance to review gluten free snacks made from sweet potatoes, I jumped at the chance.

The fact that I am a Kentuckian made it even sweeter for me since these strips are made right here in the bluegrass.

These are Wyld Strips (“The Simple Sweet Potato Snack“) and I’m excited to say that they taste as good as I’d hoped they would.

Wyld Strips are available in two equally delicious varieties:

  • Coconut Date
  • Sweet Potato Pie

Each is made from simple ingredients, beginning with the sweetest of spuds, sweet potatoes. I couldn’t say which of these strips is my favorite if I had to – because the delicious flavor of sweet potato comes through brilliantly in each. Coconut, another personal favorite, is a beautiful addition in the Coconut Date strips.

Wyld Kitchen has more planned in the way of healthy snacks and I can’t wait to see where their creativeness takes them. If future endeavors are as tasty as this one, my taste buds are going to enjoy every step of the journey!

Halloween doesn’t have to be unhealthy. Same can be said for the fast approaching Thanksgiving and Christmas holidays, as well. The trick is to have a plan and stick to it.  If you fill your home with candy, make no mistake about it – you’re going to eat until it’s gone!

Plan on healthier alternatives this Halloween. The recipe below above makes a wonderful, healthier alternative… and, come on, how cute is it?!?!

I’ll add a few more healthier but still delicious and fun Halloween treats over the coming days.

Creating these little Jack O’Lanterns is as simple as carving out oranges and filling them with Pritikin’s Chocolate Mousse! When fun and chocolate team up, you have a surefire winner.

Chocolate Mouse Jack O’Lantern

Yield: 5

1/2 Cup

Chocolate Mouse Jack O’Lantern

Ingredients

  • 1/4 cup water cold
  • 1/2 cup cocoa powder unsweetened
  • 1/4 cup Splenda granulated
  • 2 teaspoons vanilla extract
  • 12 ounces tofu silken, extra-firm

Instructions

  1. In a medium saucepan, add water and warm over low heat, bringing to a low simmer.
  2. Add cocoa powder to saucepan, stirring constantly until the mixture becomes a fudge-like consistency.
  3. Remove from heat.
  4. Add Splenda to fudge, mixing well. Add vanilla extract, mixing well.
  5. In a food processor fitted with a metal blade, add tofu and chocolate fudge mixture. Process until mixture is smooth and creamy.

It’s That Time Again: Time to Start Thinking About Healthy School Lunches and After School Snacks

Is it just me, or did this summer fly by faster than any summer has ever flown? Don’t get me wrong, this Autumn fanatic isn’t complaining or anything – it just seems like the weeks zipped past. I’m sure 9 out of 10 kids are more upset about it than I am because the end of summer marks the beginning of school.  Come to think about it, I’m sure there are lots of teachers, aides, secretaries, principals, etc who aren’t much happier than the kids!

I love what I do… whatever it is that I do.  You know, the thing that allows me to do food reviews, such as the forthcoming one for Virginia Cocktail Peanuts.  I was sent a adorable little tin of Toffee Virginia Peanuts to review and, I have to tell you, it was one of the most delicious things ever delivered to my door.  I’d love to be able to say that I’m enjoying them right now as I’m writing this review, but alas, they aren’t just gone, they’re long gone.

I can, however, say that I’m fondly recalling the flavor as I’m typing the words.  That’s something, right?

After one bite, the first thing I thought of – besides, “Mmmmmm… so good… mmmmm” – was how perfect these peanuts would be for sticking in a gift basket or gift bag.

KRAFT MILKBITE Milk & Granola Bars: Chocolate and Strawberry

Mad crazy deliciousness.  I had the opportunity to review a couple of boxes of Kraft’s new Milkbite Milk & Granola Bars and my taste buds haven’t stopped buzzing since.  I’ve looked in one of my local stores for them and I’m checking another one for them today. Suffice to say I have every intention of loading up.

KRAFT MILKBITE Milk & Granola Bars are available in Strawberry, Chocolate, Oatmeal Raisin, Peanut Butter and Mixed Berry flavors. I was sent the Strawberry and Chocolate (I’m guessing my reputation as a chocoholic is known far and wide).  The bars carried the name KRAFT, so I knew they’d be great – however, I didn’t realize they’d be this great.  Naturally, I went for the chocolate first and, boy, did it not disappoint.

What makes these snack bars different?

• Made with real milk
• 30% daily value of Calcium
• 5g of Protein
• Good source of Fiber and Vitamin D
• No artificial flavor, colors or preservatives
• 7g of Whole Grains per bar

I’d add this to the list: They’re amazingly delicious!

As I said, I opened the chocolate Kraft Milkbite Milk and Granola Bars box first. There’s a code chocoholics live by and I don’t just know the code… I wrote the code.  The first thing I was struck by was how pretty the bar is. It looks like something on a dessert tray.  One bite in told me that it tastes like something on a dessert tray too.  Seriously, it tastes like something that could be behind the glass at Starbucks – but with a lot less calories.

A little later, I returned to the refrigerator to try one of the strawberry bars. Make no mistake about it, I’m exceptionally fond of strawberries and anything remotely strawberry flavored. So, I was anxious to try one of the Strawberry Kraft Milkbite Milk and Granola Bars.

It had me at hello.

I can’t possibly describe to you the amazing strawberry aroma that was released the second I tore open the wrapper. It was like standing in the middle of a strawberry field.  Heavenly.  Yet, even with that intoxicating experience, I was STILL caught off guard when I took a bite. Wow!  It was as though a Strawberry Smoothie and a granola bar had a baby, then drizzled her with a little icing. I’m getting so hungry for another one right now, the store had better have these Kraft Milkbite Milk and Granola Bars in their dairy aisle (where they’re found, incidentally) or they’ll have a situation on their hands.

These healthy and delicious bars are perfect to take along anywhere – walking, a ballgame, hiking, fishing, school, the office, etc. Convenient, healthy, low calorie, and fantastic.  You aren’t going to beat that combination.

You MUST grab a couple of boxes today – the Strawberry one and then another one (you can choose the second one, but you really have to grab the Strawberry first).  Personally, I’m going to grab 1 of the Strawberry, 1 of the Chocolate, and 1 of the other flavors I’ve yet to try. I’ll let you know how great each one is.

Bob Blumer’s Cauliflower Popcorn

The following recipe is from one of my favorite cookbooks, Glutton For Pleasure: Signature Recipes, Epic Stories, and Surreal Etiquette. This cookbook puts the f in fun cooking and eating.

The recipe is one that I make often. My entire family loves this healthy snack, so it’s perfect for snacks for ballgames, The Biggest Loser (after all, I’m convinced Bob Harper sees through the tv), Survivor, etc. Make it, you’ll love it.

Bob Blumer’s Cauliflower Popcorn

1 head cauliflower
4 tablespoons olive oil
1 tablespoon salt

Preheat oven to 425F. Cut out and discard cauliflower core and thick stems. Trim remaining cauliflower into florets the size of golf balls. In a large bowl, add cauliflower, olive oil, and salt. Toss thoroughly. Spread cauliflower on a baking sheet (Lined with parchment paper, if available, for easy cleanup). Roast for 1 hour, or until much of each floret has become golden brown. (That’s the caramelization process converting the dormant natural sugars into sweetness. The browner the florets, the sweeter they will taste.) Turn 3 or 4 times during roasting.

Use crumpled up aluminum foil or paper towels to create a false bottom in your popcorn container, fill it with cauliflower, and serve immediately.

I serve it in plastic Pop Corn Containers to up the whole fun vibe. These are delicious.

KIND Healthy Snacks, I Love You

My husband and I were killing a little time before seeing a movie Friday night and, well, you know me, killing time meant hanging out in Starbucks for a little C & C (caffeine and chatting).  I saw some outrageously delicious looking nutritional bars near the register, so I grabbed  one for me and one for my husband.  I’m sweet like that.  I wanted to have them to nosh on when we came out of the movie.

They were KIND Healthy Snack Nutritional Bars, the Apple Cinnamon Nut + Fiber variety.  I ate mine on the way home, as we were talking about how dang good the movie (I Am Number 4) was.  My husband didn’t reach for his right away… he was still too pumped up from the movie I guess… and after I took one bite of mine, I kind of slid his back into my purse – out of sight, out of mind meant mine for later.  I’m sweet like that.

Seriously, these are outrageously delicious.  Since that night, I’ve hunted down a few other flavors as well. Each blew me straight away.

You can taste the natural goodness in these nutritional bars.  Literally taste the difference between them and their counterparts.  I think we’ve (unfortunately) become accustomed to additives, trans fats, tons of sodium, and sweeteners that are put into the things we eat – even the “healthy” foods.

It SHOULD taste unusual to eat food with any of these unnatural additions but it DOES taste refreshingly unusual  to eat something completely natural, wholesome, and un-violated by any unwelcome additives.

These bars are simply exceptional – so delicious I can’t even find the appropriate words.

Personally, I’ve only seen these little beauties at my 3 local Starbucks (yes 3, God loves me).  However, a Store Locator on KIND’s website actually showed me a few more locations.  Don’t think for a minute I’m not headed that way.  According to the website, there are many, many, many more varieties I MUST find.  Of course, I plan to also keep buying the Apple Cinnamon Nut + Fiber bar each time too.  SO wonderful!

I recently had the pleasure of reviewing some extra-unique, extra-wholesome, and extraordinary cookies. They’re Goji Gourmet’s Goji Berry Cookies and they’re as ingenious as they are delicious.  They’re small, soft, and absolutely scrumptious.  They’re perfect for kids or adults – basically anyone who has a sweet tooth they want to satisfy while staying on the healthy side of the dietary fence.

Goji Almond Oat CookiesI loved each variety but if I had to put them in order of my preference, they’d read like this: Goji Almond Oat (I absolutely cannot stay out of these cookies), the Goji Orange MintChip, the Goji Chocolate Chip, the Goji Cherry Cacao, and the Goji Ginger Walnut.

The Goji Almond Oat Cookies are addictive – they should come with a warning label saying as much.  I’m also totally hooked on the Goji Orange MintChip cookies.  The only way to describe them is to say they taste like Christmas would taste if it had a flavor.  The citrus of the orange reminds me of the fruit baskets that are always around the house during the Holidays and the mint makes me think of candy canes.

So, there you have it. They taste like Christmas.

The Goji Cherry Cacao and Goji Chocolate Chip cookies love to be dunked in milk.  They’re super with Rice Milk (a personal favorite).

The Goji Ginger Walnut cookies may come in last in my list but don’t think they aren’t special – ginger just isn’t one of my favorite flavors for some reason.  I LOVE the smell of ginger, but Goji Chocolate Chip Cookiesthe flavor always leaves me scratching my head.  My daughters FLIPPED for this variety though.

Just as well, it frees me up to concentrate on the rest of the gang.  And by concentrate I mean gobble.  If you (like me) have healthier eating in mind for 2011, but have no intention of compromising on flavor and food enjoyment, these are cookies you’ll want to try. They’re wholesome, delicious, nutritious, and perfect for kids of all ages.

They’re ideal to pop into lunch boxes too.
