Tasty Coleslaw

by Joi on February 24, 2006

1 firm white cabbage, finely sliced
3 or 4 sweet apples, such as Pink Lady, cored and finely sliced
4 to 5 TBS mayonnaise
salt and freshly ground pepper, to taste

Combine the cabbage and apples in a large bowl. Stir in the mayonnaise and season with salt and pepper.

Cover bowl and refrigerate. Stir well to blend before serving.

I got this recipe from a magazine that I’ve become addicted to (quick & simple). Apples are so freakin’ good for you that I try to sneak them into my family’s diet any way I can. This is a nice sneaky little way!

Have a great weekend!
