Watergate Salad

1 pkg. instant pistachio pudding
1 cup miniature marshmallows
1 large can crushed pineapple
1 (12 oz.) carton Cool Whip
1 small pkg. chopped pecans

Mix Cool Whip and pudding together. Add drained pineapple, marshmallows, and pecans. Chill for a few hours prior to serving.

This is one of my favorite cold salads - it rivals Five Cup Salad for taste and ease in making. I love it so much, in fact, I’m gonna grab the ingredients at the store this afternoon and make it for supper. (If my daughters and I don’t eat it before supper rolls around. It could happen.)

Don’t let the Pistachio pudding scare you off, I don’t particularly care for Pistachio nuts - although my husband eats them by the handfuls - but the pudding is absolutely amazing. It gives the dish a beautiful green color, making it perfect for St. Patrick’s Day or a fun dish for fans of the the Celtic’s, the A’s, Michigan State, or the Packer’s.
