Wheaties Muffins

1 cup sifted all purpose flour
¼ cup sugar
3 teaspoons baking powder
½ teaspoon salt
¼ cup softened shortening
1 egg
½ cup milk
2 cups Wheaties or Total Cereal

Preheat oven to 400°. Grease muffin tins.

Sift together the dry ingredients (flour through salt). Add the shortening, egg and milk.

Fold in the cereal.

Bake about 20-25 minutes.

Serve hot with butter and a tall glass of cold milk!

This is one of those really rare recipes that’s healthy, delicious and easy to make. I also love the fact that they’re so wonderfully unique – most people have never even heard of them.
