3 cups sifted All-Purpose flour
5 tsp. baking powder
1 tsp. salt
3 Tbs. sugar
4 large eggs
2-1/4 cups milk
1 Tbs. vanilla
Two-thirds cup melted margarine
One-third cup very, very finely chopped pecans
Melt butter; cool. Sift together the flour, powder, salt and sugar in a large mixing bowl.
Beat eggs in a large mixing bowl for 1 minute on high speed. Add milk and vanilla; add to dry ingredients. Beat, on medium speed, for about 1 minute. Blend in the butter.
Pour two-thirds cup batter onto center of hot, pre-heated, waffle iron. Quickly sprinkle about 2 Tbs. pecans. Close lid and bake about 5 minutes. Serve immediately.
Freeze leftovers; toast frozen waffles in toaster.
