Chicken and Dumplings
1 whole chicken
3 cups all purpose flour
1½ tsp salt
¾ cup shortening
A little ice water
Boil chicken until tender and falling off the bones. Remove from water, saving the broth. Tear the chicken into pieces. Discard bones. Mmix flour, salt, shortening, and just enough ice water to make a workable dough.
Sprinkle flour on the counter, roll out a small amount of dough thinly. Cut into small strips, or into squares, then add to the broiling broth.
Do not cover pan while dumplings are cooking!
Stir occasionally.
After the dumpings are of the consistency you desire, combine them with the chicken. Pepper to taste.
Thicken the pineapple juice with cornstarch in a saucepan over medium heat. Use a wire wisk to remove lumps. Pour over fruit, gently toss to coat.
