French Coconut Pie
3 eggs
1½ cups sugar
½ cup softened margarine or butter
1 tbsp. lemon juice
1 tsp. vanilla extract
1 3½ oz. can flaked coconut
1 unbaked pie shell
Pre-heat oven to 350°. Beat eggs in bowl with whisk. Stir in sugar, margarine, lemon juice, vanilla, and coconut.
Pour into pie shell.
Bake for about 45 minutes. Cool.
