Southern Sweet Potato Pie

3 Tbs all-purpose flour
1 2/3 cups sugar
1 cup mashed sweet potatoes, (use the canned varitey, by all means! Just drain well.)
2 eggs
1/4 cup light corn syrup
1/4 heaping teaspoon Pumpkin Pie Spice (This is what separates this pie from the rest!)
pinch of salt
3/4 cup evaporated milk
1/2 cup margarine
***1 unbaked pastry shell (9 inches)



In a large bowl, combine the flour and sugar.

Add potatoes, eggs, salt, Pumpkin Pie Spice, margarine, evaporated milk, and corn syrup. Beat well.

Pour into pastry shell.

Bake at 350° degrees for 55-60 minutes. By all means serve with Cool Whip. Enjoy!



***If you haven't the time to make the crust from scratch, use the store-bought kind that "unfolds". It is much better than frozen shells.
