The Deviled Egg Tray of My Dreams… (Great Gift Idea for Cooks Too)

One of the foods we have every single holiday is deviled eggs… except we call them “Kangaroo eggs” because one of my daughters gave them this nickname when she was 4 and, by gosh, it was so cute, it stuck!

Speaking of stick (nice, unexpected segue here), my beautiful glass heirloom tray looks fantastic on the table, but in the fridge is a whole other situation – the plastic wrap I have to use always sticks to the eggs, messing up the paprika sprinkled on top while smooshing the nice little mounds completely.

This is the year I am finally investing in a set of great looking Deviled Egg Trays with Lids (Amazon link). Not sure where this set has been all my life but now that it’s in my sights, a whole new world just opened up.

This wonderful set includes three trays with lids, which means you can make enough Kangaroo eggs for everyone to take plenty home with them!

Every now and then I see something new in a store that’s so exciting and delicious looking that I stop my cart so fast I nearly throw one of my grandbabies out of it! It happened fairly recently at Meijer when I spied these Egglife Egg White Wraps.

I’m crazy about wraps – breakfast wraps in particular. Blame it on McDonald’s – they got me hooked on them with their delicious breakfast sausage wraps. Unfortunately, due to health reasons, I had to give up all gluten and wheat, which meant I had to kiss these wonderful breakfast burritos goodbye. Making them at home has always been a little tricky too because gluten-free wraps aren’t always pliable or soft.

That’s why I got so excited when I saw these Egg White Wraps. I knew they’d be soft enough to fold around my fillings and soft enough to bite into without each bite making my brain register “gluten-free… it tastes and feels like this because it’s gluten-free.”

These wraps were even better than I expected – as easy to use as a tortilla wrap but much, much, MUCH more delicious.

To make these gluten-free wraps, I cut potatoes into chunks and fried them with onion. While they were frying I made my bacon. I didn’t add scrambled eggs to these wraps because… well… the wraps ARE eggs!

I added shredded Monterrey Jack cheese and Pace Picante Sauce and the wraps were absolutely outstanding. I can’t wait to try them with sausage next time.

If you’re lucky enough to have a Meijer store near you, check for these wraps on your next trip. I got the original flavor but others are available.

Amazon has another brand of egg wraps and many other wraps (Amazon link) available. As of now, they don’t have the Egglife brand available.

When I  had to start eating entirely gluten-free (health reasons), I realized how much I took sandwiches for granted – especially favorites like chicken salad, pimento cheese, and egg salad. Throw them on bread and BOOM, you’re done. When you have (or choose to) eat gluten-free or choose to eat keto, you have to get creative. Thankfully this is pretty darn easy and actually just as delicious, if not more so.

If you’ll be eating this chicken salad recipe on bread (regular or gluten-free), you’ll probably want to chop the veggies finely and chop the chicken and eggs as much as possible. If, like me, you’ll eat it on the plate with lettuce, tomato, and all the pickles in the house (What? Not everyone is a pickle hound like me??), leave the chicken, boiled eggs, and veggies chunky (as in the picture above)- you’ll be glad you did when stabbing them with a fork.

After you’ve combined the ingredients, taste and add any extra mayo or seasonings desired.

Either way, I think you’re going to love this chicken salad recipe.

I’ve used mine (at least once a week) for over a year and think, “This is one of the best kitchen gadgets ever made..” each time I use it. The eggs turn out PERFECT each time and are gloriously easy to peel.

Multi Hard Boiled Egg Peeler: One A-Peeling Kitchen Gadget!

Ingenious! This Multi Hard Boiled Egg Peeler is going under the 2019 Christmas Gifts for Cooks Guide category but, let’s be honest here, this is something most of us will want… not just before Christmas, but also before Thanksgiving. Kangaroo Eggs (Deviled Eggs to most of you, but one of my daughters started calling them Kangaroo Eggs when she was little and they’ve been Kangaroo Eggs in our family since. Come on, how could they NOT be?) are a staple of our family gatherings. Easter, Thanksgiving, Christmas, Fourth of July – hmmm, now that I think about it, they’re at get-togethers as much as I am.

The only thing I hate about making Kangaroo Eggs (Deviled Eggs) is the peeling. Hate it with a passion. Some have a beautiful gift for shelling a hard-boiled egg without causing any damage to the egg, itself. They’re peels even look like works of art. My youngest daughter, Stephany, is the world’s most gifted egg artist. Every egg, perfect. Every peel, long and glorious. She doesn’t even chip a nail in the process.

I do NOT have this gift. Like, at all.

That’s why I am very excited about the Multi Hard Boiled Egg Peeler, on the left.

I’ll soon be making these popular eggs and everyone will think Steph made them! I may or may not let them in on my secret.

Multi-Hard Boiled Egg Peeler Description:

  • Peels 1-3 eggs in under ten seconds. Quick, simply & no mess.
  • Egg Stripper spins and rotates in water to loosen and remove egg shells.
  • Simply fill the egg stripper base with water up to the water fill line. Add hard-boiled & chilled eggs. Close & shake it up and down (but not too hard!) for about 5 seconds.
  • Seeing the white of the egg indicates that egg shell was loosened enough and the egg will be ready to slip out of its shell.

The Multi Hard Boiled Egg Peeler is available in two sizes – the small allows you peel 3 eggs at once, while the larger one accommodates 5 eggs. Since I make mine in batches of 12, I’m just ridiculously anal enough to go with the smaller one, as 3 is a factor of 12…. 4 spins around the block will get the job done.

And they thought I never paid attention in math class. Obviously I did…. that day.

Scrambled Eggs with Mushrooms and Tomato

My love of and infatuation with eggs defies description, so I won’t even try. I love to try different techniques with them – even if I have a preferred style of fixing a particular egg dish (omelets, for example), I love to experiment with different ingredients, measurements, and cooking styles.

When it comes to scrambled eggs, you could LITERALLY cook them differently each day of the year. Most of the time I add 1 TBS milk, heavy cream, or (rarely) water per 2 eggs. However, with the scrambled eggs, here, I only add 1 TBS heavy cream. The moisture in the vegetables compensates for the decrease in liquid.

If you don’t like mushrooms, pass this one by as the mushroom flavor is strong (I love mushrooms like crazy, so I’m good to go). You could always substitute green onions for the ‘shrooms or tomatoes if you so desired.
