
Nielsen-Massey Pure Coffee Extract and Pure Vanilla Extract
I’ve posted a lot of Nielsen-Massey recipes on Get Cooking because they’re a brand I use consistently. Whether it’s one of their traditional vanilla extracts or an unexpected flavored extract, Nielsen Massey Extracts are always nothing short of perfect. Seriously, they take what could be a great recipe and make it an instant legend.
Nielsen-Massey recently sent me two new exciting extracts to try:
I’m still trying to decide which one is my favorite. As a coffee fanatic, I expected the choice to be easy, but I’m seriously loving the Peppermint Extract every bit as much – which is saying a lot.

Pure Peppermint Extract
I’ve used the Pure Peppermint Extract in cookies (it turns traditional sugar cookie recipes into something special), oatmeal, muffins, hot chocolate (!!!), and cakes, and even hot tea. I’ve also flavored pancakes and French Toast with peppermint extract and used it along with vanilla extract for homemade whipped topping. For most recipes, I take the amount of vanilla I’d normally add and split the difference with Peppermint Extract.
If I normally use 1 tsp in a recipe, I’ll just 1/2 vanilla and 1/2 peppermint extract. The most recent time I made my favorite chocolate frosting, I did just that and the flavor was fantastic.
I’d replace it entirely with the peppermint extract, but I’m a vanilla extract junkie – you’d have to pry vanilla extract out of my clinched fist. The two pair well beautifully, though.
While I haven’t personally done it yet, I have a feeling the peppermint extract would make brownies extra fun.
Peppermint is to the Christmas and Holiday season what Pumpkin is to autumn. I find myself wanting to put it in everything in an effort to keep tasting the season for as long as possible.

Pure Coffee Extract
I’ve also had a lot of fun using the Pure Coffee Extract in different recipes. It gets along deliciously with chocolate. It’s made muffins, cupcakes, milkshakes, pancakes, and chocolate chip cookies extra interesting.
When the weather warms up, I look forward to using both of these beautifully flavored extracts in ice creams.

I highly recommend ALL Nielsen-Massey Extracts – I haven’t come across one yet that I didn’t fall head over apron in love with.
