You’re looking at the components of one of my favorite sandwiches these days. I was going to say one of my favorite “healthy sandwiches,” but the truth of the matter is, it’s one of my favorite sandwiches, period. The fact that it’s healthy just makes me feel better about eating them.
I’ve given up a lot of processed meats, so I’m eating more peanut butter than ever. In fact, given the fact that I use peanut butter in homemade granola bars and in smoothies as well as on sandwiches means I’m buying more peanut butter than ever before. That’s okay with me, I love the stuff!

It’s great as a peanut butter sandwich all by itself or with sliced bananas and drizzled honey added for extra nutrition.
